Skinny Pulled Pork Carnitas Tacos

My favorite food has to be mexican! Many people think mexican food is fattening...and it is, if you choose the wrong things to eat! I took one of my favorite recipes, carnitas tacos and modified it into a healthier low-fat version! When buying the pork make sure to buy the boneless pork shoulder blade roast instead of the pork shoulder picnic. I like to serve my tacos with Homemade Guacamole & Fresh Pico De Gallo (Salsa) on corn tortillas.
Skinny Pulled Pork Carnitas Tacos
Makes 6-8 Servings
Serving Size: 4oz (1/2 Cup) of Pork 
Calories: 185 
Ingredients:
2.5lb Pork boneless Shoulder Blade Roast....try to remove as much fat as possible
2 Tbsp Garlic Powder
2 Tbsp Chili Powder
1 tsp Black Pepper
1/2 tsp Cayenne Pepper
1 Medium Onion - Coarse Chopped (save a little to dice for tacos)
3 Garlic Cloves
3/4 Cup Fat Free Low Sodium Chicken Broth
Handful Chopped Cilantro
1 Tbsp Canola or Vegetable Oil
Directions:
1. Remove as much fat as possible from the roast. Then coat pork with garlic powder, chili powder, black pepper, and cayenne pepper. In a large pot heat oil over medium high heat. Brown pork on all sides, about 8 mins. Add chopped onions & garlic cloves. Saute' for 2 min add chicken broth, cover and cook at low for 6-8 hours. 
2.When ready remove pork from liquid and let rest for 15 min. 
3.While pork resting warm corn tortillas in a pan on medium heat. 
4.When pork has cooled shred pork and put in tortilla with Homemade Guacamole, Pico De Gallo, cilantro & onion.
